This is a guy who has a blog and just wrote a book on knife skills, which apparently is incredibly detailed. Even if you don't need to know 6 ways to slice an onion (although it's pretty cool), check out the "tools" section of his website: not only is there a great measurement conversion calculator, there's also one for brining.
